What is a kitchen scale?

Ranging in price from affordable to expensive (more common in professional applications) a quality digital scale will provide easy-to-read measurements with a high level of precision. They use a strain gauge, an electrical component, whose resistance changes based on the compression of the component. A small computer in the scale houses a table of values allowing it to accurately calculate the weight of the load. Many of these scales provide near-instantaneous readings, allowing cooks to measure as they pour the ingredients onto the scale. These scales also feature a tare feature that allows the cook to subtract the weight of the bowl or container from the overall measurement.
